The proof of a recipe is, of course, in the eating and this section will give a number of recreated dishes. However, this process is not as straightforward as it would be today. For a start, it is often very difficult to find the right ingredients. Secondly, the recipes are often devoid of accurate measures, and even when measures are given, they should be treated with great care since there was considerable variation both in history, and according to location. As a result, the modern cooking process necessarily involved a great deal of trial and error!
